Low and Slow, North African Style
A tagine is one of the most elegant cooking vessels in the world — its distinctive conical lid captures steam and returns moisture to the ingredients as they cook, producing meat, vegetables, and legumes that are deeply tender and full of flavor with very little intervention. At Tarzian West for Housewares, Brooklyn's neighborhood kitchen store for over 50 years, we carry the Emile Henry Delight Ceramic Tagine — a French ceramic tagine designed for authentic results in a modern home kitchen.
Emile Henry Delight Ceramic Tagine 4 Qt. — Emile Henry has made ceramic cookware in Burgundy, France since 1850. Their tagines are made from Burgundy clay, which heats gently and evenly and holds heat exceptionally well — ideal for the long, slow cook that a traditional tagine requires. Unlike traditional clay tagines that may crack on direct heat, the Emile Henry is safe on gas, electric, and induction stovetops, as well as in the oven, under the broiler, and in the microwave. The 4 Qt. capacity comfortably serves 4–6. The conical lid seals in steam and circulates moisture throughout the cook. Chip- and scratch-resistant glaze. Dishwasher-safe.
