Cook's Illustrated's favorite hand-crank pasta machine, made in Italy, rolls silky sheets and cuts lasagna, fettuccine, and tagliolini right out of the box, adjustable across ten thicknesses from 0.6 to 4.8 mm. Clamp it to the counter and crank, or add the pasta drive motor (sold separately) and expand to a dozen shapes with extra cutters. To clean, just brush or wipe it dry.
