Shun's Classic Santoku — a Japanese all-purpose blade that handles vegetables, proteins, and fruit with the same easy precision. The slightly down-sloped tip and wide blade make it an excellent everyday knife for slicing, dicing, and mincing in one motion.

Each blade is forged in Seki, Japan, with a VG-MAX cutting core clad in 34 layers of Damascus stainless steel on each side. The result is a 16° edge that holds for a long time, plus the flowing wood-grain pattern that makes Shun's Classic line instantly recognizable. The D-shaped ebony PakkaWood handle is engineered to fit the curve of the hand and resist moisture.

Two sizes

  • 5.5" — between Shun's small and full-size santoku. Best for cooks with smaller hands, or for medium tasks: cutting fruit at breakfast, mincing herbs, slicing chocolate or butter. Some use it in place of a paring knife.
  • 7" — the traditional full-size santoku. The everyday workhorse for prep at scale.
