The Shiroko or White Paper No.2 Steel Knife is made of fine Japanese Steel Company Hitachi's High Carbon Steel which makes extreme sharpness, very good edge holding and high working hardness.
This means you can grind it to exceptional sharpness, which it retains for a long time. The blade is particularly suitable for the gentle preparation of foods though you need to treat the blade to prevent from rust.
Deba --- For cutting fish and light mincing. Thick, wide blade. The back of the blade can be used to chop thin bones. Thick and Heavier blade of Deba has good durable edge, suitable for cutting a Fish, a Chicken (includes the bones), also for filleting tasks.
Western Deba (Yo-Deba) --- Western Deba or Yo-Deba is the Western-style version of the traditional Japanese deba. The edge is generally double-edged. The Western Deba has heavier weight and more durable edge, designed for harder use --- for cutting a fish, chicken (includes bones) and shrimps, lobsters. But still not recommended to cut frozen foods, very hard and thick bones to avoid the blade damages.
